Léa, Clara, César and Emmanuel have been living and working in Arbois for several years. They all studied viticulture and oenology in Montmorot, the local agricultural high school. Coming from different backgrounds, each with the aim of taking over or creating a wine-growing activity, they became interested in collective establishment models, which are undervalued and underrepresented in the agricultural world.
The name of the collective is borrowed from the history of Arbois. It is said that in 1834, winegrowers took up arms to proclaim a Republic of Arbois, echoing the revolts of the Canuts in Lyon. At the request of the prefect to name the leader of this insurrection, they replied in the local dialect: NO SIN TOU TSEF.FES! (We are all leaders).
They therefore decided to create an ephemeral project to bring to life a single vintage made from grapes gleaned from across France.
Everything is vinified with indigenous yeasts, without inputs, by hand and by gravity. The juices pass into tanks, barrels, amphorae and demijohns to capture the profile of each grape variety.
