Simon's story and his journey into wine began at the Tabouret Bar, a former annex of the famous Neptune in Geneva. There, he discovered natural wines and fell completely in love with them.
But the desire to produce his own wine began to stir. He first headed to Savoy, where he trained in vine care with Damien Bastian. Then further south, to the famous Casot des Mailloles in Banyuls-sur-Mer. He eventually landed with Alice Bouvot, at the Domaine de l'Octavin in Arbois.
A varied journey that allowed him to learn all aspects of the winemaking profession, from vine to bottle.
Simon Thiébaud is gradually settling in the Jura, choosing to work with purchased grapes and those from his own recently acquired plots.
The story has just begun, and the wines are already impressively energetic, singular, and enjoyable.
