On a gloomy day in the Jura region, we're on our way to meet Thibaud in his cellar, nestled in a very old vaulted cave on Poligny's main street.
He tells us about the particularly difficult 2024 vintage, pointing to his single small vat filled with all the grapes harvested.

Thibaud began his wine-making adventure after leaving cattle farming, which he felt was too far removed from his values. He took over a small hectare of family vines, often interplanted with several difficult-to-identify grape varieties, which became the starting point for his "L'Ampélographe" cuvée.

A second hectare is being planted to reduce the impact of difficult years and to work with the grape varieties he holds dear.
With manual harvesting, slow ratchet presses, and very little intervention during aging, Thibaud produces direct, uncompromising wines that reflect his personality. It is a great pleasure for us to follow the evolution of his work.
