A Gamay that hides its true character. Often considered a simple and light varietal, here it is quite the opposite. A portion is pressed like a white wine, while the rest is divided into destemmed and whole clusters. This vinification process allows for the extraction of a multitude of different aromas. The result is a complex yet fresh Gamay, structured and spicy yet juicy.
